Maple trees should be tapped in the spring for about three to four weeks when daytime temperatures are above freezing and nighttime temperatures are below freezing.

To collect sap, drill a hole 1.5 to 2 inches deep, tap in a spile, and position a food safe collection vessel such as a milk jug or bucket.

To finish the syrup, boil the sap until it reaches 66 brix on a refractometer, let it cool to 190 degrees Fahrenheit, and pour it through an Orlon filter into clean jars or bottles.
